Reverse Seared Tri-Tip w/ Pico De Gallo
Tri-Tip the Texas way! Our simple and delicious tri-tip recipe calls for a simple rub, good clean smoke, and a hard sear. Of course, a little Pico de Gallo doesn't hurt either - Give it a try for a tasty meal!

Cook Time: 1.5 hours
Ingredients & Supplies:
1 Tri-Tip (2-3lbs)
1 tbsp kosher salt
1 tbsp coarse black pepper
1 tsp onion powder
1 tsp garlic powder
Post oak splits
Pico De Gallo Ingredients: (2 Cups)
2 large tomatoes (Chopped)
½ cup white onion (Finely Chopped)
¼ cup cilantro (Finely Chopped)
1 jalapeno (seeds removed to preference, finely chopped)
2 tbsp lime juice
Kosher salt to taste
Instructions:
Step 1: Remove all excess fat and silver skin from the tri-tip. Liberally season all sides of the trip-tip and ensure it has an even coat of seasoning.
Step 2: Heat your smoker up to 275 F. Place tri-tip on the smoker and smoke till internal temp has reached 125 F.
Step 3: Remove the tri-tip from the smoker and prep the grill to 450-500 F to sear. Place the tri-tip directly on the grill and sear all sides until the tri-tip reaches an internal temp between 130-135 F. Pull and let rest for 20 minutes before slicing.
Step 4: Slice the tri-tip against the grain and top with Pico De Gallo. Enjoy!
Pico De Gallo Instructions:
Step 1: In a bowl combine the diced onion, jalapeno and lime juice. Salt to taste and let marinate for 3-5 minutes.
Step 2: Add chopped tomatoes and cilantro into the bowl with the other ingredients. Stir well.
Step 3: Let the mixture marinate so the flavors can meld. Serve and enjoy!
