The Swanson
"The Swanson" is a bacon wrapped turkey leg made famous by Ron Swanson from Parks and Recreation. This is our take on "The Swanson" and we can assure you that it is jammed packed full of flavor and meaty goodness!
Ingredients & Supplies:
4 large turkey legs
3 quarts water
¾ cup kosher salt
2 cups brown sugar
Bacon
BBQ Seasoning
For the Glaze:
¾ cup of BBQ sauce
¼ cup of apple cider vinegar
1 tsp of honey
1 tsp of BBQ Seasoning
Step 1: Prepare your brine mixture by mixing kosher salt into three quarts of cold water until fully dissolved. Once salt has dissolved mix in brown sugar until dissolved.
Step 2: Using a knife, remove turkey skin from the turkey leg. Place the legs in the brine mixture and refrigerate overnight.
Step 3: Remove turkey legs from the brine mixture. Pat dry and wrap tightly in bacon. Season the outside of the bacon wrapped turkey leg with your favorite BBQ Seasoning.
Step 4: Smoke the bacon wrapped turkey legs at 275-300 F until the internal temp is at 155 F. Apply your glaze mixture and finish off until internal temp of the turkey reaches 165-170 F. *Tip* Warm your sauce up right before it is time to glaze so that it is smooth and doesn’t tack on the meat too heavily.
Step 5: Pull the bacon wrapped turkey and let rest for 15-20 minutes before you eat. Enjoy!
